There’s a good chance you spent the holiday weekend indulging -- either at Taste of Beverly Hills, the L.A. Times Celebration of Food & Wine, your brother-in-laws’s barbecue or all three.
So Tuesday’s recipe of the day from the L.A. Times Test Kitchen is on the skinny side and celebrates taking advantage of fleeting seasonal produce: a garden corn and tomato salad.
The calorie count will have you doing a double-take. This is a vegetarian recipe, but if you paired it with a modestly-sized serving of tofu -- or chicken or beef -- you’d still be ahead of the game.
