Jelly, Marmalade Accent Fare : Holiday Yam Dishes Spiced With a Touch of Orange

Use the sweet flavor of oranges to accent holiday yam dishes this season. Marshmallow Yams are baked with an orange, currant jelly and miniature marshmallows. Acadian Candied Yams get their special flavor from orange marmalade.
MARSHMALLOW YAMS
6 medium yams, cooked, peeled and sliced
1 large orange, peeled, sliced and quartered
1/4 cup currant jelly
2 tablespoons butter or margarine
1 cup miniature marshmallows
Arrange yams and orange pieces in greased shallow baking dish. Top with jelly and dot with butter. Sprinkle marshmallows over top and bake at 350 degrees 20 minutes. Makes 6 servings.
ACADIAN CANDIED
YAMS
2 tablespoons butter or margarine
1/3 cup orange marmalade
4 medium yams, cooked and peeled
In small saucepan melt butter. Add marmalade and cook and stir over low heat until melted. Add yams and cook, stirring frequently until glazed and heated through. Makes 4 servings.
