The article (“For Some Restaurants Waste was the Last Straw,” July 16) by Amy Wallace on how some restaurants are combating waste was excellent! I applaud these individuals for initiating these ideas, having the courage to enforce them and thereby taking the first step to educate mankind in the direction we know we all have to go.
I certainly hope more restaurants will follow their example.
