Fourth of July : Pizza, Focaccia Doughs

The doughs from which pizza and focaccia are made tend to be soft and easy to mix by hand. If you want to use a heavy-duty electric mixer or food processor, follow these instructions:

For heavy-duty mixer, use paddle attachment and mix dry ingredients on low speed few seconds. Add liquid while mixer is running. Mix about 1 minute. Scrape bowl and paddle with rubber spatula. Mix again about 30 seconds. If you want to leave dough in mixer bowl to rise, remove paddle and cover bowl with plastic wrap.

For food processor, pulse dry ingredients 2 or 3 times. Stop processor and add liquid. Pulse to moisten dough evenly. Let processor run continuously 15 to 20 seconds. Carefully remove blade and scrape dough from work bowl into oiled bowl to rise.
