“A ’93 Cros-Parantoux Meo-Camuzet. One of the things about Pinot Noir: It can give you the experience of Notre Dame when it’s great. Every grape has a makeup to it. Merlot is very horizontal. Cabernet is very staccato: It’s string instruments. That’s why they put those qualities together [in Pinot Noir]; it makes for a complete orchestra. When you’re trying a great Pinot you’re getting a great level . . . a level of ecstasy. Pinot more than any other grape can give you that level.”
