Come the dog days of summer, the wine that seems to suit the season is a crisp, chilled rose. This one from Commanderie de Peyrassol in Cotes de Provence--the hills of Provence--has a delicate nose of roses and raspberries. Pale coral in color and light in body, it has a finish that’s all silk. Easy drinking as they come, it’s a great wine for the beach or the barbecue. Enjoy it with cold salads and grilled chicken or fish.
