Recipe: Cheesy garlic bread

Servings: 6 to 8
1/2 cup (1 stick) unsalted butter
6 cloves garlic, minced
1/4 cup chopped fresh basil
2 tablespoons chopped Italian parsley
Dash dried red pepper flakes
8 ounces Taleggio, rind removed, flesh diced
1 baguette
1. Heat the oven to 350 degrees.
2. Melt the butter in a skillet over low heat. Add the garlic and cook gently until soft and mellowed but not browned, about 5 minutes. Remove from the heat and cool slightly.
2. Scrape the butter and garlic into a bowl. Add the basil, parsley, pepper flakes and Taleggio. Mix well.
3. Slice the bread in half lengthwise. Spread the cheese mixture evenly over both cut sides. Set the bread on a baking sheet and bake until bubbly, 15 minutes. Cool slightly before cutting crosswise into 1-inch strips.
Each of 8 servings: 320 calories; 314 mg. sodium; 62 mg. cholesterol; 22 grams fat; 13 grams saturated fat; 19 grams carbohydrates; 12 grams protein; 1 gram fiber.
